TED Ed - The chemistry of cookies
This TED Ed video (4:29) examines the many reactions that occur in the simple act of making cookies. As the word 'cookies' suggests, it is American with the temperatures in degrees Fahrenheit. The video covers many topics such as emulsions, salmonella, caramelisation and how egg protein changes when cooked. Whilst watching, students could identify the different physical and chemical reactions that occur when cooking cookies.
